Refreshing Salad
1. Frisee 2. Arugula 3.Endive 4. Radicchio 5.Mizuna
6.Escarole 7. Baby beet greens 8.Cress
9. Tatsoi 10.Butterhead lettuce 11.Romaine 12.Mache
13.Oakleaf 14.Looseleaf lettuce
Salad: Start with any well washed salad greens
(see picture) or cabbage.
Add any of the following by themselves or in combination:
• fresh chopped vegetables: tomatoes, avocado, carrots, bell peppers, mushrooms, snap
peas, green beans etc. etc.
• leftover cooked vegetables: corn, peas, beets etc.
• cooked beans (if using canned be sure to drain and rinse well)
• toasted nuts or seeds
• fruit: strawberries, orange slices
• Try a new veggie: sliced kohlrabi adds a nice crunch
Lightly dress with homemade dressing, it’s healthier and cheaper too. See recipe below.
Salad Dressing: Serves: 2-3
Basic Vinaigrette Salad Dressing:
• 3 tablespoons olive, canola or vegetable oil
• 1 tablespoon vinegar (red wine, white wine or rice vinegar is good)
• ¼ teaspoon sugar (optional)
• Salt and pepper
Combine ingredients in a small bowl, or shake together in a small jar.
Italian Vinaigrette
• Add ½ teaspoon minced garlic; ½ teaspoon dried oregano; 1 teaspoon parsley or basil
Mustard Vinaigrette
• Add ½ teaspoon Dijon mustard
